From Punjab to Dubai
It began in a village kitchen outside Amritsar, where our grandmother measured spices by the palm of her hand and never let a guest leave hungry. Those same recipes — handwritten, unchanged, quietly guarded — travelled with our family to Dubai.
Our masalas are still roasted and ground in-house every morning. Our dal makhani simmers for fourteen hours over a low flame. Our breads are slapped onto the walls of a clay tandoor fired before service. Everything else — the linen, the copper, the marble — is Dubai. The welcome is pure Punjab.
